1 tablespoon fresh thyme, chopped
1 tablespoon Dijon mustard
1 teaspoon lemon zest
1/4 cup fresh lemon juice
Salt and pepper to taste

Instructions:
Preheat the oven: Preheat your oven to 400°F (200°C).
Prepare the marinade: In a small bowl, whisk together the olive oil, minced garlic, rosemary, thyme, Dijon mustard, lemon zest, lemon juice, salt, and pepper.
Marinate the lamb chops: Pat the lamb chops dry with paper towels. Rub the marinade all over the lamb chops, ensuring they are evenly coated. Let the lamb chops marinate for at least 15-30 minutes (or overnight in the fridge for more flavor).
Sear the lamb chops: Heat a large oven-safe skillet over medium-high heat. Sear the lamb chops for 2-3 minutes on each side until browned.
Bake the lamb chops: Transfer the skillet to the preheated oven and bake the lamb chops for 6-8 minutes for medium-rare, or until they reach your desired level of doneness. Use a meat thermometer to check for an internal temperature of 135°F (57°C) for medium-rare.
Rest and serve: Let the lamb chops rest for 5 minutes before serving. Garnish with fresh parsley and serve with lemon wedges.
