Step 1: Prep the Ingredients
The key to making an effortless stir-fry is preparing everything in advance. Before you heat up the pan, slice the chicken into thin strips, chop the broccoli into bite-sized florets, and cut the carrots into thin, even slices. Mince the garlic and ginger. Set all ingredients aside in separate bowls for easy access.
Step 2: Heat the Pan and Cook the Chicken
Heat a wok or large skillet over medium-high heat. Once the pan is hot, add 1 tablespoon of vegetable oil. Swirl it around the pan to coat the bottom. Add the chicken strips in a single layer and cook for 3-5 minutes until lightly browned and cooked through. Season the chicken with a pinch of salt and pepper. Remove the chicken from the pan and set it aside.
Step 3: Stir-Fry the Vegetables
In the same pan, add the remaining tablespoon of oil. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant. Next, toss in the broccoli and carrots. Stir-fry for about 4-5 minutes, or until the vegetables are crisp-tender. If the vegetables start to stick, add a splash of water or chicken broth to keep things moving.
Step 4: Add the Sauce
Return the cooked chicken to the pan. Pour in the soy sauce, oyster sauce, and sesame oil (if using). Stir everything together to coat the chicken and vegetables evenly. For a thicker sauce, add the cornstarch mixture and stir well until the sauce thickens, about 1-2 minutes.
Step 5: Serve
Once the stir-fry is done, serve it immediately over steamed rice or noodles. Garnish with sesame seeds or chopped green onions if desired.
