2 cm grated ginger
25 cl of water
50 cl of vinegar
300 g of granulated sugar
1 kg of watermelon peel
Cut the bark into strips and remove the green skin.
Soak them overnight with coarse salt.
The next day, drain and dry them.
In a saucepan pour the water, vinegar and sugar.
Bring to the boil and add the peels.
Add the spices and cook over low heat for an hour.
Place in a jar and wait until the preparation has cooled before closing it.
Leave for a month before consuming.
3 – Salted watermelon skin
250 g watermelon skin
250 g of sugar
50 ml of white vinegar and half a lemon.
Cut the skin into small cubes and leave it to soak in salted water overnight.
Drain, put in a saucepan, covered with cold water and simmer for 30 minutes.
