Instructions
- Prepare the Cranberries:
- If using fresh cranberries, rinse them under cold water and remove any stems or damaged berries. If using frozen cranberries, there’s no need to thaw them.
- Cook the Cranberries:
- In a medium saucepan, combine the cranberries, sugar, and water (or orange juice).
- Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to a simmer.
- Simmer:
- Cook for about 10-15 minutes, or until the cranberries burst and the mixture thickens. Stir occasionally. If using, add the cinnamon and orange zest during the last few minutes of cooking.
- Add Pecans:
- Remove the saucepan from heat and stir in the chopped pecans and vanilla extract (if using). Let the relish cool to room temperature.
- Chill:
- Once cooled, transfer the relish to a serving dish or airtight container. Refrigerate for at least 2 hours or until ready to serve. The flavors will meld together as it chills.
- Serve:
- Serve the cranberry pecan relish as a side dish with roasted meats or as a spread on sandwiches and crackers.
