Cheesy Pepperoni Pizza Roll-Ups with Low-Carb Tortillas
• 1 cup shredded mozzarella cheese
• 20-25 pepperoni slices (turkey or regular)
• 1/4 tsp Italian seasoning
• 1/4 tsp garlic powder
• Olive oil spray or cooking spray
• Fresh basil or parsley, chopped (for garnish, optional)
Directions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Lay out each tortilla on a flat surface. Spread a thin layer of marinara or pizza sauce on each tortilla, leaving a small border around the edges.
3. Sprinkle mozzarella cheese evenly over the sauce, then place pepperoni slices on top of the cheese.
4. Sprinkle a pinch of Italian seasoning and garlic powder over the pepperoni and cheese.
5. Carefully roll up each tortilla tightly, then place seam-side down on the prepared baking sheet. Lightly spray the tops of the roll-ups with olive oil or cooking spray to help them crisp.
