Ingredients:

For the Cupcakes:

1 2/3 cups all-purpose flour

1 cup granulated sugar

1/4 tsp baking soda

1 tsp baking powder

3/4 cup unsalted butter, at room temperature

3 large egg whites

2 tsp pure vanilla extract

1/2 cup sour cream

1/2 cup whole milk

For the Filling:

1 cup heavy cream

2 large egg yolks

3 tbsp granulated sugar

1 tbsp cornstarch

1 tsp pure vanilla extract

For the Chocolate Ganache:

1/2 cup heavy cream

6 oz semi-sweet chocolate, chopped (for a smoother ganache)
