Watermelon skin is underestimated because it very often ends up in the trash. However, there are many ways to recycle it and use it for your health
1 – Watermelon peel jam
1 kg watermelon rinds in strips (removed the green)
750 g of sugar
1 lemon juice
Place all ingredients in a jam pot (or saucepan). Cook over medium heat until 105°C (around twenty minutes). If you don’t have a sugar thermometer, check the cooking by pouring a drop of jam onto a plate: it should set.
Pour into jars, close them and turn them over until completely cooled.
2 – Watermelon skin in vinegar
10 cardamom pods
4 cloves
100 g of coarse salt
